Capsicum Rice

Today I tried it for breakfast and it was too good. collected it from http://www.indobase.com


Ingredients:

• 5 Capsicums (chopped)
• 1 cup Raw Rice
• 1/2 tsp Lemon Juice
• 1/4 tsp Turmeric Powder
• 1-1/2 tbsp Dry Grated Coconut
• 3 tbsp Oil
• 1 tsp Black Gram
• 1/2 tsp Mustard Seeds
• 2 tsp Bengal Gram
• Few Curry Leaves
• 1 tbsp Peanuts
• 8-9 Cashew nuts
• 6 Red chilies
• Salt as per taste
• Coriander Leaves for garnishing 

For powdered masala
• 2 Red Chilies
• 1" piece Cinnamon
• 1/2 tsp Cumin seeds
• 1-1/2 tsp Black gram
• 2 tsp Coriander seeds
• 1-1/2 tsp Bengal gram
How to make Capsicum Rice:
Take oil in a frying pan and heat it.
Fry all the ingredients of the masala till the mixture turns brown.
Remove the pan and allow it to cool.Grind to make a fine powder. Keep aside.
Cook the rice till it is 3/4 th cooked. Keep aside for cooling.
Now pour oil in a frying pan and add mustard seeds, black gram, Bengal gram, red chilies, curry leaves,peanuts and cashew nuts.
Fry the mixture till it starts fuming.
Add chopped capsicum and fry till it they become tender.
On a medium flame add grated coconut.
Fry the coconut till it turns light brown.
Now add cooked rice, turmeric and salt.
Fry the dish for few minutes until the rice becomes hot.
Sprinkle powdered masala and pour lemon juice.
Mix it properly and garnish with coriander leaves.
Capsicum Rice is ready to serve.

Mutton Kolhapuri Recipe

Ingredients:

1kg Mutton
• 4 Large chopped onions
• 1 tsp Turmeric powder
• 1 Cup grated coconut
• 4 tsp Kolhapuri masala
• 4 Garlic clove
• 1 Ginger
• 1 tbsp Garam masala
• Fresh coriander leaves
• 3 Fried lavangi chillies
• Salt to taste

How to make Mutton Kolhapuri:

 
Grind garlic and ginger to make a paste.
Heat the oil and fry chopped onions till it turns golden brown.
Add ginger garlic paste and stir it for a while.
Mix grated coconut, turmeric powder, garam masala, kolhapuri masala and fried
lavangi chillies.
Add mutton and fry till it turns brown.
Now add water and fried spices in mutton.
Cook it till the mutton turns smooth.
Adorn it by fresh coriander leaves.
Serve it with rice.

Shahi Mushroom Recipe

Ingredients:

• 200 g Mushroom (cut into half)
• 4 Onions (chopped)
• 5 Tomatoes (small sized and chopped)
• 2 Green Chilies (sliced)
• 1 inch of Ginger (grated)
• 3 tbsp Clarified Butter (Ghee)
• ½ cup Cashewnut
• ½ tbsp Garam Masala
• ½ tbsp Red Chili Powder
• 1 cup Cream
• 1/2  tbsp Sugar

How to make Shahi Mushroom:
 
Pour ghee in a pan and put onions in it, fry till golden.
Now fry green chilis, tomatoes and ginger in it.
After tomato gets softened, remove the mixture from the flame.
Cool it and blend it in a blender.
Mix all the other ingredients in the pan with the mixture. Fry it for 2 minutes.
Add mushroom now, cook at low flame.
Garnish with green coriander.

Chilly Mushroom

Ingredients:

• 400 gm Button Mushrooms
• 2 Capsicums
• 10 green chillies
• 2 medium Onions
• 2 cm Ginger
• 6 flakes Garlic
• 4 tbsp Oil
• ½ tsp Chilli Powder
• 2 tsp Dark Soya Sauce
• 2 tsp Vinegar
• 1 tbsp Corn Flour
• 1 cup Water
• Salt to taste

How to make Chilly Mushroom:

Cut mushrooms into halves.
Cut capsicums into halves, remove the seeds and cut into thin strips.
Cut the green chillies into halves horizontally.
Grind onion, ginger and garlic to a paste.
Heat 4 tbsp of oil. Fry the green chillies & ground paste.
Add chili powder and ¼ cup water. Simmer till almost dry.
Add capsicums, mushrooms and salt. Cover and cook on low flame till vegetables turn tender crisp.
Add Soya sauce and vinegar. Mix corn flour with water and add.
Bring to a boil, simmer for 1 minute.
Serve Chili Mushroom hot with noodles or fried rice.

Simply Mushroom.

Ingredients:

• 450 gm Fresh Mushroom
• 1 Capsicum (medium sized)
• 2 tsp Red Chill Powder
• 2 tsp Dry Coriander Powder
• 1 medium Onion
• 1 medium Tomato
• 1 Green Chilli (cut into small pieces)
• 1 tsp Oil
• 1 tsp Cumin-Mustard Seeds
• 1/2 tsp Turmeric Powder
• Salt to taste

How to make Vegetable Mushroom:

Wash mushroom and cut into two pieces.
Trim onions, capsicum, tomato in square pieces.
Pour oil in a pan and add cumin and mustard seeds to it.
Mix green chillies and onions.Saute till golden brown.
Add capsicum and then add tomato, cook till soft.
Then add mushroom, turmeric, red chill powder, coriander powder, salt.
Mix it well, cook until the mushroom became tender and then turn off the flame.

Tava Mushroom

Ingredients:

• 200g Mushrooms (chopped)
• 1 tbsp Fresh Curd
• 3 tbsp Oil
• 1 tsp Chili Powder
• ¼ tsp Turmeric Powder
• Salt (as per taste)
• 1/4 tsp Ginger Paste
• 1/4 tsp Garlic Paste

For Cashew Nut- Almond Paste

• 10 Cashew Nuts
• 4 Almonds
• 2 Onions (sliced)
• 1 tsp Poppy Seeds (khas khas)
• Oil (for deep-frying)

How to make Tava Mushroom:

Soak poppy seeds, cashew nuts and almonds in water.
In the meantime, deep fry the onions in the oil, till they are brown.
Prepare the cashew nut-almond paste, by putting together the fried onions and soaked ingredients in a blender and blending them.
Heat some oil on a tawa and stir fry the ginger and garlic pastes.
Now, add the cashew nut-almond paste to the ginger-garlic paste, followed by curd, salt (according to taste), turmeric powder and chilly powder. Cook for a few seconds.
Add mushrooms to the mixture and stir-fry, until they blend with the paste and turn brown. Serve the tava mushrooms hot.
